Baked Vegan Zucchini Cauliflower Fritters

What does one do with an abundance of zucchini they got from the market? They turn them into these fritters. Mainly, I wanted to make this so I could say fritata. Different thing? Oh well. It's still fun to say. These savory Vegan Zucchini Fritters are incredibly easy to make and the perfect way to sneak some veggies into your diet!

These delicious fritters are only 5 ingredients and can be ready in 30 minutes! Perfect as a snack, breakfast, or side dish!
