Beet Chocolate Cupcakes

Say hello to these healthy chocolate cupcakes that are soft, moist, and have a not-so-secret ingredient: beets! These Beet Chocolate Cupcakes are vegan, easy to make + FLUFFY. I seem to be a beet fanatic lately. You could say I am dancing with the beet. Okay, too much? Since trying to make a red velvet cupcakes, I ended up creating something even better and more delicious. I'm talking about chocolate of course. This recipe requires only 11 ingredients that you likely already have on hand!

These cupcakes are soft and sweet. You will not even realize the beet is hiding in there.
