This 11-ingredient homemade, Vegan Coffee Flavored Cookie Dough Ice Cream is a perfect no-bake treat for the summer! Loaded with Gluten-Free Double Chocolate Chip Cookie Dough & PACKED with flavor.
When I first tried creating this recipe, I had a bit of a major oopsies, as you can watch in my Vegan Test Kitchen Video. Instead of using instant coffee, I decided to use regular old liquid coffee, which ended up being my biggest mistake. Since coffee's base is water, it ended up crystallizing, rather than turning into a smooth creamy finish. Not only that, the taste and color where not up to par.
So in my attempt number two, I finally buckled down headed to the store and got instant coffee. The differences in this recipe are:
I Used Instant Coffee --> Enriches the Flavor and Color
I Used More Dates --> Adds Caramely Flavor + Sweeter
I Used Molasses --> Deepens the Color
These small differences have TRANSFORMED the end result. Now, this homemade dairy-free ice cream is sweet, rich, creamy, and honestly quite dreamy!
That's why I created my Vegan Test Kitchen series to show the process in creating a recipe. It can work out great the first time, but often there is minor tweaks that can be made to make the recipe even better.
