If you’ve never had a cosmic brownie, you are plain and simple missing out. Growing up we would get them as treats in the classroom and if I am being honest they were WAY too sweet for me. However, over the years I have come to have quite a sweet tooth (does all the cookie recipes give that away?!) and I have come to enjoy them.
So, I thought I would make this vegan copycat cosmic brownie recipe. No brainer, right? This recipe is way better than the ole box kind and luckily it isn't loaded with corn syrup, hydrogenated oils, or preservatives.
So brace yourself, and get ready for a rectangle of fudgy goodness coated in a creamy dairy-free ganache and topped with crunchy chocolate pieces.
Tips for the perfect copycat cosmic brownie:
Use Coconut Milk for the Ganache: Coconut Milk is higher in fat therefore you will get a similar result to a traditional chocolate ganache! However, if you are allergic or simply think coconuts are nasty, you can opt for using plant milk. I will say the consistency will likely differ!
Don’t over mix: The key to a good brownie with a fudgy, yet delicate crumb is not overworking your batter. Once everything is combined just pop it in the oven!
BE PATIENT: Ganache takes some time to set, so even though you want to dig in right away, sprinkling with the chocolate candies or sprinkles while the ganache is hardening.
