These mild- to moderate-heat Easy Vegan Enchiladas will change your life! A delicious homemade Enchilada Sauce smothers a sauteed onion, red pepper, and black bean filling wrapped in soft tortillas. After baking, I drizzled them with a refreshing Creamy Avocado Sauce, cilantro, red pepper flakes, and chopped avocado. I love making this when I want to make something quick and doesn't take much effort!
