Most Gluten-Free Flours and items and be more expensive to purchase than regular wheat flour, which can be a bit of a bummer if you are on more of a budget, so that's why I wanted to make a recipe that is:
Luckily for you, this recipe does just that and no, there are not any bananas involved. For some reason oat and banana pancakes are a common healthy breakfast staple in the vegan community. I have eaten too many of those that I was in need for a new recipe to take its place. Alas, my experiment for creating a new gluten-free recipe was met with great success.
The base for this gluten-free pancake mix is primarily oats. I am continually inspired by the simplicity and versatility of oats. Mainly because they are very inexpensive where I live, are hearty, and honestly so good.

This recipe can be easily stored in your pantry and whenever you are ready to make some pancakes all you will have to do is add water and a flax egg.

Other Variations: If you are feeling adventurous, go ahead and add in some cinnamon, cacao, or any other spices that you fancy to the mix.
Syrup or Jam? My favorite way to top off my pancakes is with maple syrup and pecans. I used to be a big fan of homemade jam on top, but what can I say, maple syrup will always have my heart.
