InstaPot Vegan Lasagna (Quick & Easy)

So... I have something to admit. I am OBSESSED with my InstaPot. Valentine's may not be here, but I am hardcore swooning over this device.

I am talking Rom-Com head over heels.

I kid you not I have made this InstaPot Vegan Lasagna at least 10 times in the past 2 weeks.

Yup. Yup, I ate quite a bit of noodles.

But it was so damn worth it.

Let me explain and no this isn't an ad. This is just someone who gets really excited over home supplies.

God, I really am an adult.

Anywho, if you are like what's so great about this?! Basically, the Instapot cooks things in a short period of time so that you can get moving and grooving with your day... and if you are like me and don't like to make things ahead of time and are lazy AF when it comes to making food this recipe is gonna be your new BFF for life.

This easy vegan InstaPot Lasagna is a quick and easy dinner that you can make in less than 30 minutes. All you need are 8 ingredients to make this dairy-free meal.

What you should know about this Vegan InstaPot Lasagna recipe:

  1. It is 100% Vegan (aka there is zero dairy, egg, or any animal product in here)

  2. Easy & quick. Time is so essential, so I wanted to make this easy vegan recipe as quickly as possible. Seriously, you can make this in less than 20 minutes.

Some Final Thoughts & Tips:

  • Don't have vegetable broth? That's fine you can just use water. I will say though, it will be slightly less flavorful.

  • On Storing: Store your leftover lasagna in the fridge for 2-3 days.

  • Gluten-Free Noodles? Answer: You could certainly try, however, the cooking temperature may be slightly shorter as gluten-free noodles usually cook faster.
