One Pot Vegan Vegetable Soup

It is cold outside and it makes me not want to be productive, so that is where the beauty of soup comes in.


You just throw it in a pot, let it sit for 45 minutes and BAM you've got yourself an easy and nutritious meal.


I just feel like soup is a little too underrated my dudes.


So that is why I have made this delicious and hearty vegetable noodle soup that is loaded with veggies, full of flavor, and made in a one pot! It’s perfect for cold winter days and can be made in a large batch to enjoy throughout the week. Did I also mention it is totes vegan and you can make it gluten-free?!


Woot Woot.

This One Pot Vegetable Noodle Soup recipe is:

  • Healthy AF

  • Reaaaallllly simple

  • Delicious

It is perfect because you can just make a big batch and then eat it for the rest of the week!

Some Final Thoughts & Tips:

  • Other Add-Ins: Go ahead and add in any other veggies that you would like. Bell Peppers or corn would be a great addition!

  • Can you Freeze it? Yes! If you don't want to eat the soup all at one you can either cut the recipe in half or freeze it for up to 2 months!
