Pecan Pie Bars

I am just going to put out there that these Pecan Pie Bars is one of the best recipes I have ever made.

Sweet, salty, and caramely. For now, we can just pretend that is a word, but these little treats are incredible. Imagine a thick layer of luscious pecan pie filling on top of a crunchy cinnamon shortbread crust. Have I won you over?

Each year around the holidays or anytime we go anywhere, I am the only one who eats a plant-based diet. Meaning that I have to prepare all of my meals. I sure if you are clicking on this recipe you can #relate. It can get overwhelming and kind of annoying because I want to bring something that will knock the socks off of peoples' feet and having them asking for the recipe. Especially when you get comments like "Vegan, ew". Like come on you didn't give it a chance Susan, With that in mind, my mission was a SUCCESS. These Pecan Pie Bars were gone within the first hour. I felt accomplished.

These gooey caramel-sweet Pecan Pie Bars are simple, delicious, and make for a perfect treat this holiday season! Plus they require only 10 ingredients!

This recipe can be made completely gluten free by making substituting regular oats for gluten-free ones and using raw nuts! Plus, if you don't have coconut sugar, you can just substitute in brown sugar.
