My first time making a savory dish with pumpkin was a disaster. I wanted to be a seasonal gal, so I followed a recipe for pumpkin rice that included onion and apple. That should have been a warning signal to not venture into that type of territory. Ever since then I have been afraid to step foot into the savory pumpkin world, but alas a few years ago I tried an Aldi's Pumpkin Chipotle Sauce that knocked me off my feet because of how good it was. I decided to recreate that beauty myself, and it tastes almost identical. Smoky, spicy and sweet are all flavors in this Pumpkin Chipotle Pasta Sauce. The heat from the chipotle peppers complements the pumpkin perfectly. This recipe is perfect for those cool Fall days!
