Snickers Ice Cream Bars

Vegan Snickers Ice Cream Bars. Say WHAT??? I mean can you honestly say you do not like the beautiful combo of:

  • Crushed Peanuts

  • Silky, Rich Dark Chocolate

  • Creamy Peanut Butter Ice Cream

  • AND a Peanut Butter Caramel Sauce

Seriously, just the thought of those individually has got me ready to break out my spoon and indulge in these treats individually.

I have been in an ice cream mood lately. All thanks to the lovely warm weather that is finally happening here in the Midwest. Luckily for me, this recipe is:

  • Healthy

  • Easy

  • DELICIOUS

  • Satisfying

  • Refined Sugar-Free

These Homemade Snickers Ice Cream Bars are creamy frozen treats you can make at home with only 7 ingredients! This easy to make recipe is a rich and creamy peanut butter ice cream topped with a layer of peanut butter date caramel, crushed nuts, and then coated in a thick layer of chocolate.

Do not get stuck in the raging waters when you can be looking into the ocean. ⠀ It’s time to look at the big picture.⠀ ⠀ When you allow yourself to take a step back, overlooking rather than continual seeking you are able to:⠀ ⠀ ❌ Determine what is vital to you and what is not aka what is working and what is not. (This can be in business, relationships, material items, etc)⠀ ⠀ ✖️ See what has happened in your life for the better. Often, we get caught in the details of the day to day, not taking a step back to see how far you have come and the why.⠀ ⠀ ❌ Figure out your next moves. ⠀ ⠀ ✖️ Offer clarity into areas you may be feeling stuck in. ⠀ ⠀ What areas of your life are you needing to get more clear on? What do you need to detox from your life?

Some Final Thoughts & Tips:

  • Peanut Butter Substitution: If you and peanut butter aren't close pals, you can swap it out with almond butter, cashew butter, or sunflower seed butter!

  • Can I Skip the Dip? Don't feel like getting your hands dirty when dipping the bars? Don't worry you can completely skip this step AND just pour the chocolate over the peanut butter layer and freeze it! Then you don't have to do the tedious task of dipping.

  • On Freezing: When you are freezing the coconut milk portion, make sure to freeze it on an even surface to prevent unevenness!
