What is that I smell? Oh, just something I have whipped up... you know Pumpkin Spice Donuts, but they are baked not fried.

I am going, to be honest with you... I am usually not a fan of baked donuts. Give me the fried dough all day long. Cuz, I don't know about you, but I would much rather have a cupcake and call it a day. HOWEVER, there is something so magical about these that I just had to share the recipe.

These made-from-scratch vegan pumpkin donuts are soft, moist and fluffy. These donuts are baked, not fried, for a delicious breakfast treat... or dessert!

With their brilliant orange color, ultra-moist texture, and delightfully dreamy pumpkin flavor, these baked (not fried) doughnuts are the perfect on-the-go breakfast or dessert for a crisp autumn day.

  3. It can be made in under an hour! The best part of baked donuts is that they do not take forever to make, unlike their fried companions. You can have all of the pumpkin spice goodness ready in just one hour.

Final Thoughts & Tips:

  • Swap out Brown Sugar: Don't want to use brown sugar? No problem! Substitute out the brown sugar with coconut sugar.

  • On Storing: Store your leftover donuts in an airtight container for up to 1-2 days. Psst... they are best right out of the oven.

  • Don't want to use oil? You can just skip it or use more pumpkin.
