My favorite pie growing up was Coconut Cream Pie. Something about the silky texture of the custard loaded with whipped cream all on top of a flaky pie crust. Years later when I became a vegetarian, I decided to be ‘out there’ I followed a recipe for a vegan coconut cream pie. The pie was fantastic if you wanted to have Coconut Cream Pudding. That is actually a great idea. Skip the pie, let’s just have the filling! Ever since then, I’ve only indulged in fruit pies for their simplicity in making. This week I was set out on a mission to make a pie that holds its shape, tastes like the traditional version, and easy to make.
Bada Bing Bada Boom. I did it, I became Pitbull. Just kidding, I made the pie, AND it was actually much easier than I anticipated. The only thing I am wondering about now is why was coconut milk never apart of the traditional ingredients for making this pie. It doesn’t make sense. Anyway… This rich, creamy, decadent Coconut Cream Pie is a classic that will become a family favorite.
