No need to go on a wacky road trip when you've got these Rocky Road Cookies. These rich, chewy brownie-like cookies are laced with marshmallows, peanuts, and chocolate chips. They require only 11 ingredients, easy to make, and did I mention they are oil-free too? Yeah, game changer.
After many hours searching the internet for an oil-free cookie that didn't look like a flaky crepe, I decided I would take the matter into my own hands and make my own. These chocolaty Rocky Road Cookies have the same texture as a classic buttery cookie. but made slightly healthier. Plus, they look divine, I am getting hungry thinking about them now!
I honestly disliked the flavor of rocky road ice cream until recently. It just felt wrong. For some reason, my taste buds have changed to enjoy the flavors of peanuts, chocolate, and marshmallows combined to form this delicious cookie recipe.

If you wanted to get crazy, you could even make these into Rocky Road Brownies by just pressing the dough into a 6" X 6" pan and cook it for 40-45 minutes.
