So, when deciding what to make, the first thing that popped into my mind was S'MORES. I am a bit of a hoe for S'mores. Who doesn't love graham crackers, marshmallows, and chocolate? No summer needed for this tasty combo. I rather have it year-round.
This Vegan S'mores Pie is made with a graham cracker crust, filled with a rich chocolate pudding fillings and topped with toasted vegan marshmallows. Perfectly sweet, refined sugar-free option, and made with only 7 ingredients.

It is 100% Vegan (aka there is zero dairy, egg, or any animal product in here)
Super sweet & quick. Time is so essential, so I wanted to make this easy vegan dessert as quick as possible. Seriously, you can make this in under an hour.
Allow your pie to cool completely!
It’s so important to let your pie cool COMPLETELY before slicing into it. This is just like any other good pie recipe. When it’s still warm, the center is very gooey so allowing it to set will provide you with a perfectly fudgy texture all throughout.
And not a hot mess.

Once it is all put together and the marshmallows are toasted, and then move it to the fridge for at least 2 hours. If you need to chill it longer, cover the pie while it chills. Just make sure it’s completely cooled before covering it so that condensation doesn’t form.
Some Final Thoughts & Tips:
Refined Sugar-Free Option: Don't want to use refined sugar? No problem! Substitute out coconut sugar for the brown sugar.
On Storing: Store your leftover pie in the fridge for 2-3 days.
Coconut Oil instead of Canola Oil? Answer: yep you can do that or use olive oil as well!
