Summer is served! Enjoy the warm weather with this Vegan Strawberry Shortcake Ice Cream Parfait! This old fashioned strawberry shortcake has fluffy, homemade vanilla cake layered with sweet strawberries and rich vanilla non-dairy ice cream.
With warm weather finally making its rounds to the Midwest, it has got everyone including me craving ice cream. Instead of just having a plain bowl of ice cream, I decided to switch it up by recreating a classic. If you don't know, Strawberry Shortcake consists of these 3 basic ingredients:
Shortcake or Biscuits
Simple enough right? Plus it is SO good!
For this spiritual pit stop, I am going to share with you something I wrote when I first began my healing journey.
I surrendered to the noise that billowed relentlessly in my mind. I led myself through gates that closed with iron locks. Denying me access to the world. Inside, the rampages embodied the self as gravel embedding themselves into my flesh remaining stagnant. It took a few years before the pebbles trickled off my skin leaving nothing but imprints to remind me of their time. Here I lay in the sun free.
When we look at the mess that resides in our head, it can be easy to let it overtake our reality. If we hold onto emotions instead of letting them flow through us as they happen, they can cause physical and mental blockages that come in the form of dis-ease. Looking at what is triggering us and causing us pain is when the healing process begins.

Plus, I have included a Gluten-Free Option for anyone avoiding gluten! You can either use all oat flour or substitute the all-purpose flour for a gluten-free version.
