Vegan Turtle Pecan Ice Cream

Imagine a sweet & salty dairy free vanilla ice cream swirled with a caramel sauce, loaded with pecans, and chocolate chunks.


I don't know about you, but that is speaking my taste buds language.


For some reason, whenever I think of turtle sundaes I think of moms. Maybe it is because my mom only got these at ice cream shops as a kid? We are gonna go with YES.


Anywho if you are looking for an easy vegan dessert, look no further because this recipe is made from:

  • Coconut Milk

  • Caramel

  • Chocolate Chips

  • Pecans

Super easy right? Right. Without further ado, let's do this!

Sometimes you just gotta allow yourself to indulge in the little things in life.⠀ ⠀ Whether that is buying yourself something a lil extra at the store, watching reality tv, or simply having a few scoops of a rich, creamy turtle ice cream. ⠀ I used to think indulging was bad. I was living in a Scared Straight reality and my biggest fear was lack / not enough.⠀ ⠀ What I have found is that indulgence is really about finding what makes you happy and creating a 𝒷𝒶𝓁𝒶𝓃𝒸𝑒. ⠀ ⠀ So go ahead and indulge in the sweeter things in life every now and then.

Seriously, who wouldn't enjoy the taste of a rich creamy vanilla ice cream swirled with a caramel sauce, pecans, and chocolate chunks.

Some Final Thoughts & Tips:

  • FOR SENSITIVE STOMACHS: If you are like me and have a sensitive stomach, please use coconut milk that is 1. Organic 2. Contains NO Guar Gum. Not only that, it tastes better and has a WAY better consistency. P.S. Target has an affordable Organic Coconut Milk that contains no guar gum --> Where I live, it is only $1.69. #mymindisblown

  • On Freezing: Store your ice cream on a flat, even surface in your freezer so they don’t get lopsided and strange looking. You can get away with enjoying these tasty treats in as little as 3 hours for a more mousse-like texture, but if you can leave them in the freezer longer or overnight too!
